Spicy Tuna Salad

A big part of eating healthy is adding more fruits and vegetables to our diet. I like to divide my meals into 5 portions a day. I eat smaller quantities which leave me feeling full without any bloating.  A lunch packed with vitamins and nutrients that satisfies your hunger and gives you energy for the day can alter your eating habits at night as well.

This delicious tuna salad recipe is not only quick and easy to prepare but will also keep your momentum going until you have your next meal. The best part is the dressing of course.

You will need:

  • Spicy canned tuna
  • Lettuce
  • Cucumber
  • Tomato
  • Sweet Corn

Salad Dressing:

  • 1 tsp Mayonnaise
  • 3 tsp Lemon Juice
  • 3 sprinkles of Sea Salt
  • 1/2 tsp English Mustard
  • 1/2 tsp olive oil

Serving Size: 1

Mix the mayonnaise, mustard and sea salt first. Then add the lemon juice followed by the olive oil.

Hot Cocoa for the Soul

It is undeniable that I have recently become addicted to hot cocoa. There is nothing more comforting than being wrapped in the warmth of a satisfying cup of chocolate sweetness, and I can humbly say I have perfected a delicious yet healthy recipe for it. Hot cocoa is a great source for antioxidants among many other health benefits which you can read about here. The important thing is to use ingredients that will not outweigh the advantages.

What you will need:

  •  250 ml milk
  • 1 teaspoon unsweetened cocoa
  • 1 teaspoon brown sugar
  • 2 sprinkles of salt
  • 1/2 teaspoon organic honey

Serving Size: 1

Feel free to add more honey for sweetness based on your preference. I hope you enjoy this delectable drink as much as I do!

 

Strawberry Blueberry Smoothie

There has been a juicing craze in the past couple of years, but I am not big on drinking juice and never got on that bandwagon. I don’t eat quite enough fruits and so I wanted a delicious recipe for a smoothie that I would really enjoy drinking often. My sister-in-law is a nutritionist and after discussing it with her, she explained that although juicing helps you acquire your recommended daily intake of fruits and vegetables, you lose the fiber and some of the nutrients. She advised me to stick to smoothies instead (not as a meal replacement, of course).  I usually like to add fruits to plain yogurt or cereal for breakfast, and that’s how I got the idea for this smoothie.

Strawberry Blueberry Smoothie:

  • 1 cup blueberries
  • 1 cup strawberries
  • 3/4 cup vanilla almond milk
  • 2 tablespoons plain yogurt
  • 1/3 Avocado (about 4 medium-size slices)
  • A handful of Ice

Serving Size: 2

Prep time: 5 minutes 

For those who do not like the taste of almond milk, you can replace it with regular or soy milk, but you will need to add honey for sweetness. If you prefer your smoothie a bit chunky, then don’t mix it in the blender for too long and you can even eat it with a spoon. This recipe yields a big portion so make sure to share!
